ABCABC
Write a structured poem with an ABCABC rhyme scheme. As many lines and stanzas as you like. If you go past 6 lines you can continue with ABC or switch to DEFDEF and so on. (If you're really sneaky, you can even change the rhyme scheme at the end entirely, so long as the first six lines conform.)
