A cascade of hot H2O
pours over carbohydrates
Extracting monosaccharides
Activating amylases
Hydrolysis
The mixture is separated
and sent to a new basin.
Humulus Lupulus dives
into the bath
Contributing alpha acids
reducing sweetness, enhancing aroma
The humulone is later isomerized
The liquid is cooled
Sent to an anaerobic environment
to begin a dance with some eukaryotes
and eventually kick off some
fermentation.
